Black Bean and Sweet Potato Soup

  • 2 tsp oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 Tbsp ground coriander
  • 2 tsp group cumin
  • 2 (14 oz) cans black beans, rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 tsp salt
  • 1/4 tsp pepper
  • 6 cups broth
  • 2 sweet potatoes, peeled and chopped
  • 1 cup corn kernel

Heat the oil in a skillet and saute the onion and garlic until soft.  Add all ingredients to crocpot and cook on low for 8 hours until sweet potatoes are tender

Served for Third Thursday Soup NIght.
