Gluten Free Vegan Apple Crisp

apple filling–from Sarah Bakes Gluten Free Treats
5-6 apples, peeled and cubed
•1/4 cup organic cane sugar
•2 tablespoon corn starch or tapioca starch
•2 tablespoons fresh-squeezed orange juice
•1 teaspoon ground cinnamon
•1/4 teaspoon ground nutmeg

Topping– Shauna Niequist Crips Topping
1 cup old fashioned oats
1/2 cup pecans
½ cup almond meal
¼ cup maple syrup
¼ cup olive oil
½ tsp salt

Mix the filling ingredients together and place in an 8×8 pan. Mix together topping ingredients and place over top of the filling. Bake at 350 degrees 35-40 minutes, until fruit is bubbling and topping is crisp and golden.

Can easily be doubled and placed in a 9×13 pan.
